Melt 2 cups of sugar & heaped tablespoon of gelatine in a cup of boiling water, stand over heat until all crystals are dissolved, add 1 tsp lemon juice of vanilla essence to taste, leave white or colour with food colouring, beat untill thick and foamy, cool & cut into slices, roll in sifted icing sugar.
